{Health} Weekly Meal Plan

Health | Weekly Meal Plan | Kimberly Kalil Designs Running late with this week's meal plan ... sort of the story of my life as of late. Before I share what we're eating this week, I wanted to go over last week's meals. The Paleo Taco Shepherd’s Pie was so yummy and filling. It's not quick dinner, but it's really tasty. Next time, we'll prepare it on Sunday and either freeze it or bake it early in the week.

Now ... for the bad news: we failed at sticking to the plan this week. Failed miserably. We stuck to my diet restrictions (no gluten, no dairy, no sugar), but we just really had no interest in trying fancy, new meals. Instead, we relied on some of our new favorite: black beans, brown rice, kale, grilled chicken ... etc. We made a lot of chicken bowls and ate a lot of veggies. We're still trying to figure out how to balance the planning without over planning.

This week's meal plan is going to be a little different. I'll be traveling for business this week and since it's tax season — Mike's busiest time — the kids will having dinner with their nanny each night. I still made a plan for what they'll eat, but this time I let them pick what they wanted. At one point, Shelby request pie for every meal. Pie as in the sweet dessert, not a savory, dinner appropriate pie. Including the kids in the decision making process made it a lot more complicated and time consuming. But, I'm curious to know if Cooper will eat more, since he was including in the planning? Maybe? Let's hope that's the case.

Monday: Grilled cheese panini's (gluten free bread) and tomato soup Tuesday: Ground-beef tacos with Spanish rice (hardshell corn tortillas) Wednesday: Gluten-free pasta with butter and fresh Parmesan cheese Thursday: Breakfast for dinner (Cooper's idea) ... gluten free waffles and eggs Friday: Gluten-free pizza Saturday: Mike's choice or eating out (I'll still be traveling, so it's free choice) Sunday: Mike's choice or eating out (I'll still be traveling, so it's free choice)
